Belinda has shared with us a few of her favorite recipes!! Appetizer, Entree with a salad, and a Dessert!


For your appetizer...

Roasted Balsamic Sweet Potatoes & Feta Cheese

Servings: 24 rounds


2 medium sweet potatoes, cut into ¼ inch slices

3 tbsp olive oil

1 tsp salt substitute

1 tsp paprika

5 oz feta cheese

½ cup walnuts, roasted

⅓ cup dried cranberries

2 tbsp balsamic reduction

3 tbsp honey


1. Preheat your oven to 450°F.

2. In a small bowl, combine olive oil, salt substitute, and paprika.

3. In a large bowl toss the sweet potatoes with the paprika mixture, making sure everything is coated.

4. Line a large baking sheet with parchment paper and place the sweet potatoes in an even layer. Bake the sweet potatoes for 8 to 10 minutes on each side. (20 minutes total)

5. Transfer to a serving plate and top each with some feta cheese, walnuts, and cranberries. Drizzle balsamic glaze over each.

Notes: Use a mandoline to give you consistent slices. If you aren't a fan of feta cheese, you can use fresh ricotta. Don’t skip out on roasting the walnuts. By roasting them they will stay crispy and bring out the flavor.

For your Entree...

Maple & Orange Glazed Pork Tenderloin

Makes 6 servings 


1-½ lbs pork tenderloin Marinade

¼ cup pure Maple Syrup

2 tbsp Braggs Liquid Amino

2 tbsp No Salt Hunt Ketchup

1 tbsp Dijon mustard

2 tsp grated orange zest

1-½ tsp curry powder

1-½ tsp ground coriander

2 tsp minced garlic

1 tsp French’s Worcestershire sauce

2 tbsp all-fruit orange marmalade jelly


1. Trim Pork of all visible fat. Place pork in a large, heavy-duty, resealable plastic bag.

2. Whisk together all marinade ingredients in a medium bowl. Pour over pork in bag. Seal bag and turn several times to coat pork with marinade. Marinate pork in the fridge for at least 1 hour.

3. Transfer pork and marinade to a small roasting pan or baking dish. Roast, uncovered, at 350 for 40 minutes. Pork should still be slightly pink in the middle.

4. Let pork rest for 10 minutes before slicing. Slice thinly, drizzle extra sauce over pork and serve immediately.

Serve the Orange Glazed Pork with...

Holiday Spinach Salad

Makes 1 serving


2 handfuls fresh spinach torn into bite-sized pieces

2 tablespoons peach-infused balsamic vinegar

2 tsp extra virgin olive oil

1 orange, peel cut away and sliced into thin rounds

1 tablespoon dried cranberries

1 tablespoon sunflower seeds


1. Place the spinach in a small mixing bowl.

2. Drizzle with the vinegar and oil and toss to coat.

3. Place the dressed greens on the serving plate. Arrange the orange slices on the spinach. Sprinkle with cranberries and sunflower seeds.

Serve immediately or wait 10 minutes before serving if using thicker spinach.

And for your Dessert...

Baked Cinnamon & Brown Sugar Apples

Makes 4 Servings


4 Honeycrisp apples

1 cup rolled oats

2 tbsp packed brown sugar

1 teaspoon ground cinnamon

2 tbsp melted butter


1. Preheat the oven to 350 degrees F (175 degrees C).

2. Core each apple making a large well in the center and arrange apples on a rimmed baking sheet.

3. Mix oats, brown sugar, and cinnamon together in a bowl; stir in butter until evenly combined. Spoon 1/4 of the oat mixture into each apple.

4. Bake in the preheated oven until apples are tender and filling is bubbling about 30 minutes.

Notes: The baking sheet needs to be rimmed to avoid butter spilling into the oven.
